How to Make the Perfect Carrot Soup

Not only is Carrot Soup a delicious choice for lunch, but it’s also great for giving your eyes a health boost. Here is one of our favourite Carrot Soup recipes.
3 tbsp unsalted butter
1 Spanish onion, finely chopped
3 cloves of garlic, finely chopped
10 medium carrots, peeled and sliced
8 cups chicken broth
2 tbsp sugar
1 tsp salt
1 tsp lemon juice
Grab a large soup pot and melt the butter in it over medium heat. Throw in onions and garlic. Cook while covered and stir occasionally for 7 minutes. Add the carrots and cook for 3 more minutes.
Add the broth and sugar while seasoning with salt. Bring the soup to a boil, lower your heat, and simmer for 30 minutes. Remove from heat and let your soup cool down.
Pour your mixture into a blender or use a hand blender to puree. Pour the puree back into your soup pot and reheat it with medium heat. Add lemon juice. Serve.
